Happy christmas + Two Easy recipes for your holiday charcuterie boards

Farrah and I want to wish you a very happy Christmas filled with love and JOY! Between wrapping presents, countless trips to the grocery store and holiday baking, it’s been a busy few days and we’re looking forward to slowing down to enjoy the season with family and friends.

This will be our last post before the New Year, and we hope you know how much we appreciate our readers like you! We’ve got some exciting content planned for 2022, including a new “Library Chats” series featuring women we admire and who inspire us to live our best, most joyful lives.  We also welcome your input! Are there topics you would like to see featured on The Roost? Please tell us in the comments section! We’d love to hear your thoughts and ideas.

In the meantime, we’ll leave you with two easy recipes for your holiday cheese and charcuterie boards. Party Pecans and Cranberry Thyme Chex Mix come together very quickly and add a special, festive element to the standard meat and cheese platter. What’s more, when packaged in a pretty mason jar or tin container, they’re perfect for gifting to neighbors and hostesses alike. We’ll be making both of these today!

Party Pecans

(Recipe from the Bride & Groom, First & Forever Cookbook)

  • 1 tbspn worcestershire sauce
  • 1 tbspn unsalted butter, melted
  • 1/2 tspn liquid smoke
  • 2 cups pecan halves
  • 2 tspns onion powder
  • 2 tspns garlic powder
  • 1 tspn seasoning salt (we use Lawry’s)
  • 1 tspn sugar
  • 1/8 tspn cayenne pepper

Instructions:

  • Preheat the oven to 250 degrees, line a baking sheet with aluminum foil.
  • Combine the worcestershire sauce, butter & liquid smoke in a bowl.
  • Add the pecans & stir to coat.
  • Combine the remaining seasonings in a small bowl & then add slowly to pecans, stirring throughout.
  • Spread the pecans in a single layer on the prepared baking sheet & bake for 30-40 minutes.

This Cranberry & Thyme Chex Mix recipe from Half-Baked Harvest is so much better than anything that comes in a bag. Enjoy!
