Beginning in September right through the holidays, our mixers and ovens go into overdrive. While baking can be therapeutic any time of year, a warm kitchen and homemade goodies are especially comforting when the leaves are falling or when holiday music is playing in the background.
Whether you’re looking for a quick breakfast to serve house guests or a tasty treat to enjoy while decorating the tree–we’ve got two seasonal recipes for you that are easy and delicious! Both require ingredients that you likely have on-hand or can readily find in most grocery stores this time of year.
My girls are obsessed with these indulgent apple cider donuts that remind me of the old-fashioned ones from my childhood. Farrah’s apple cinnamon muffins offer a healthier (but equally appealing) alternative. Enjoy!
Ingredients:
- 1 3/4 cup flour
- 1 1/4 tsp baking powder
- 3/4 tsp salt
- 3 tsp cinnamon
- 1 tsp nutmeg
- 2 sticks of butter at room temperature
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs at room temperature
- 1 tsp vanilla extract
- 1/2 cup apple cider
- Heat oven to 350 F and coat 2 donut pans with cooking spray.
- In medium bowl, combine flour, baking powder, nutmeg, salt & 2 tsp of the cinnamon. Set aside.
- In the bowl of a stand mixer, cream the butter, brown sugar and 1/4 cup of the granulated sugar until fluffy. Add the eggs one at a time and incorporate well. Add the vanilla and mix.
- Slowly add the flour mixture to the butter mixture. With the mixer on low speed, slowly add the apple cider.
- Spoon batter into prepared donut pans 2/3 of the way full.
- Bake 6 minutes. Rotate pans, and bake an additional 6-8 minutes.
- Combine remaining cinnamon and sugar in a small bowl to use for coating warm donuts.
Ingredients:
- 2 cups gluten-free flour
- 1/2 cup gluten-free oats
- 2 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 3 tbsp maple syrup
- 1/2 cup melted coconut oil
- 3 tbsp butter
- One cup finely diced apple
- 2 eggs at room temperature
- Heat oven to 350 F. Prepare muffin pan(s) with cooking spray or paper liners.
- In a small bowl, combine dry ingredients (flour, oats, cinnamon, baking powder, baking soda, salt)
- In a larger bowl, combine wet ingredients (coconut oil, maple syrup, vanilla, eggs)
- Add butter, diced apples, lemon zest and lemon juice in a small bowl and microwave for 30 seconds or until melted.
- Pour dry ingredients into wet ingredients and stir until mixture is smooth.
- Add apple mixture and combine thoroughly.
- Fold batter into muffin tins about half-way or 3/4 of the way full.
- Bake for 17-20 minutes or until the tops of the muffins start to lightly brown. Muffins should have a springy texture when fully baked.
